Prepare the Ingredients
Gather all ingredients: smoked brisket, shredded cheese, sliced jalapeños, and flour tortillas. If using fresh cilantro, chop it finely.

Preheat the Pan
Heat a large skillet or griddle over medium heat. Allow it to warm up for a few minutes.

Assemble the Quesadilla
Lay one flour tortilla flat in the skillet. On one half of the tortilla, layer 1/2 cup of shredded cheese, followed by 1 cup of smoked brisket, and 1/4 cup of sliced jalapeños. Top with another 1/2 cup of shredded cheese.

Fold and Cook
Carefully fold the tortilla in half, covering the filling. Cook for about 3-4 minutes on one side, or until the bottom is golden brown and the cheese starts to melt.

Flip the Quesadilla
Using a spatula, gently flip the quesadilla over and cook the other side for another 3-4 minutes, until it is golden brown and crispy.

Slice and Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve warm with sour cream, guacamole, and chopped cilantro as optional toppings.
