Truffle Parmesan Fries Recipe

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with a towel. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

    Drain the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Season with salt immediately.

    Add Truffle Oil and Cheese

    While the fries are still hot, drizzle them with white truffle oil and sprinkle with grated Reggiano cheese. Toss gently to combine.

    Garnish and Serve

    Garnish with chopped fresh parsley and serve immediately.
