Prepare the Fries

Wash and peel the russet potatoes, then cut them into thin strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Make the Aioli

In a bowl, mix together mayonnaise, minced garlic, lemon juice, and salt until well combined. Refrigerate until ready to serve.

Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain the soaked potatoes and pat them dry. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

Season and Serve

Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, drizzle with white truffle oil, and toss with grated Parmesan cheese and chopped parsley. Serve hot with the aioli on the side.
