Instructions

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, 1/4 cup of granulated sugar, and melted butter. Mix well until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.

  2. 2

    Make the Filling

In another bowl, whisk together the egg yolks and remaining 1/4 cup of granulated sugar until pale and fluffy. Gradually add the sweetened condensed milk, key lime juice, and lime zest, mixing until well combined.

  3. 3

    Bake the Pie

Pour the filling into the cooled crust. Bake in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool completely at room temperature.

  4. 4

    Chill and Serve

Refrigerate the pie for at least 3 hours or until thoroughly chilled. Serve topped with whipped cream and garnished with lime slices.
