    Wash and chop the baby spinach, slice the mushrooms, and ensure the oven roasted tomatoes are ready.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Vegetables

    Heat the olive oil in a non-stick skillet over medium heat. Add the sliced mushrooms and sauté until they are tender. Add the spinach and oven roasted tomatoes, cooking until the spinach is wilted.

    Pour the whisked eggs into the skillet, ensuring even distribution over the vegetables. Cook for 2-3 minutes until the edges start to set.
