    Cook the Pasta

    In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Make the Sauce

    In a large skillet, heat the extra virgin olive oil over medium heat. Add the chopped Calabrian chili peppers and sauté for 1-2 minutes until fragrant.

    Add Tomatoes and Cream

    Stir in the crushed tomatoes and salt, bringing the mixture to a simmer. Let it cook for about 5 minutes. Then, add the heavy cream and stir well to combine. Simmer for another 5 minutes until the sauce thickens slightly.

    Combine Pasta and Sauce

    Add the cooked rigatoni to the sauce, tossing to coat. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

    Serve

    Remove from heat and stir in the torn basil leaves. Serve the rigatoni in bowls, topped with pieces of fresh burrata cheese, a drizzle of extra virgin olive oil, and freshly ground black pepper to taste.
