    Cook the Bacon

    In a large pot, cook the smoked bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

    Sauté Vegetables

    Add the onion and celery to the pot and sauté until softened, about 5 minutes.

    Add Potatoes and Liquids

    Add the diced potatoes, clam juice, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.

    Add Clams and Cream

    Stir in the heavy cream and drained clams, and cook for an additional 5 minutes until heated through.

    Serve

    Remove the bay leaf, crumble the bacon, and serve the chowder hot, garnished with brioche croutons.
