Directions for Preparing Maine Lobster Bisque

    Prepare the Lobster Stock

    In a large pot, melt the butter over medium heat. Add the lobster shells, onion, carrot, celery, and garlic. Sauté for about 5-7 minutes until the vegetables are soft. Stir in the tomato paste and cook for another 2 minutes.

    Deglaze and Simmer

    Pour in the dry white wine and scrape up any bits stuck to the bottom of the pot. Let it simmer for about 10 minutes until the wine is reduced by half. Then add the seafood stock and bring to a boil.

    Blend the Stock

    Reduce heat and let the mixture simmer for 30 minutes. After simmering, use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.

    Finish the Bisque

    Return the bisque to the pot, add the heavy cream, and stir in the lobster meat. Season with salt and black pepper to taste. Heat through but do not boil.

    Serve

    Ladle the bisque into bowls, top with herb brioche croutons, a dollop of creme fraiche, and a sprinkle of chopped chives.
