    Prepare the Caramelized Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions, sprinkle with salt, and cook slowly, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Set aside.

    Cook the Filet Mignon

    Season the filet mignon with salt and black pepper. In the same skillet, add remaining tablespoon of olive oil over medium-high heat. Sear the filet for 4-5 minutes on each side for medium-rare, or to your desired doneness. Let it rest for 5 minutes before slicing.

    Prepare the Tomatoes

    While the steak is resting, slice the beefsteak tomatoes and lightly grill them on the skillet for about 1-2 minutes on each side until they are heated through.

    Assemble the Sandwich

    Toast the rustic bread slices on the skillet until golden brown. Spread chipotle mayo on one side of each slice of bread. Layer with sliced filet mignon, grilled tomatoes, caramelized onions, and jack cheese. Top with another slice of bread.

    Press down gently, cut the sandwich in half, and serve immediately with your favorite side.
