    Prepare the Dough

    In a large mixing bowl, whisk together the flour, sugar, and salt. Add the chilled butter cubes and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough holds together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Apple Filling

    Peel, core, and slice the apples. In a bowl, toss the apple slices with sugar, cinnamon, and lemon juice. Set aside to allow the flavors to meld for about 15 minutes.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Roll Out the Dough

    On a lightly floured surface, roll out the chilled dough into a large round, about 12 inches in diameter. Transfer to a parchment-lined baking sheet.

    Assemble the Crostata

    Place the apple filling in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary to create a rustic look.

    Brush the edges of the dough with an egg wash (1 egg beaten with 1 tbsp water) and sprinkle with sugar. Bake for 35-40 minutes or until the apples are tender and the crust is golden brown.
