Prepare the Pork

Preheat your oven to 350°F (175°C). In a large mixing bowl, rub the pork shoulder with olive oil, minced garlic, chopped rosemary, salt, and black pepper.

Roast the Pork

Place the seasoned pork in a roasting pan and roast in the preheated oven for approximately 3 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.

Prepare the Sautéed Greens

While the pork is roasting, heat a drizzle of olive oil in a large skillet over medium heat. Add the sautéed greens and cook until wilted, about 5-7 minutes. Season with salt and pepper to taste.

Assemble the Dish

Once the pork is done, let it rest for 15 minutes before slicing. Serve slices of roast pork on a baguette with sautéed greens and sharp provolone cheese.
