Cooking the Ranchero Sauce

Add Tomatoes and Spices
Add the canned diced tomatoes, minced chipotle pepper, cumin, oregano, and salt. Stir well and let the mixture simmer for about 10-15 minutes, allowing the flavors to meld together.
Cooking Chorizo and Beans

Cook the Chorizo
In a separate skillet, cook the chorizo over medium heat, breaking it apart with a spoon, until it’s browned and cooked through, about 5-7 minutes.

Add Black Beans
Add the rinsed and drained black beans to the skillet with the chorizo, stirring to combine. Cook for an additional 3-5 minutes until heated through.
Cooking the Eggs and Tortillas

Fry the Eggs
In a non-stick skillet, fry the eggs sunny-side up, sprinkling with salt and pepper. Cook for about 3-4 minutes until the whites are set but the yolks are still runny.

In another skillet, lightly fry the corn tortillas for about 1-2 minutes on each side until they are crispy and golden.
