Blueberry Compote
Make the Blueberry Compote
In a saucepan over medium heat, combine the fresh blueberries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the blueberries begin to burst and the mixture thickens slightly. Remove from heat and let it cool.
House Granola
Prepare the Granola
Preheat your oven to 350°F (175°C). In a mixing bowl, combine rolled oats, honey, melted coconut oil, chopped nuts, and a pinch of salt. Spread the mixture evenly on a baking tray lined with parchment paper. Bake for about 15-20 minutes, stirring halfway through, until golden brown. Let it cool before using.
Assemble the Bowl
Combine Ingredients
In a serving bowl, add 1 cup of Greek non-fat yogurt as the base. Top with a generous spoonful of blueberry compote, followed by a handful of fresh strawberries, raspberries, and blackberries. Finally, sprinkle a layer of house granola on top.
