Crab Cakes Preparation

Prepare Crab Mixture
In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, green onions, old bay seasoning, egg, bread crumbs, salt, and pepper. Mix gently until just combined.

Form Crab Cakes
Divide the mixture into 4 equal portions and form them into patties. Place them on a plate and refrigerate for 30 minutes to help them hold their shape.

Pan-Fry Crab Cakes
In a large skillet, heat olive oil over medium heat. Once hot, add the crab cakes and cook for 4-5 minutes on each side or until golden brown and heated through. Remove and set aside.
Spicy Remoulade Preparation

Mix Remoulade
In a small bowl, whisk together mayonnaise, Dijon mustard, hot sauce, lemon juice, chopped capers, and minced garlic until smooth. Adjust seasoning to taste.
Sandwich Assembly

Assemble Sandwiches
On each burger bun, place a leaf of lettuce, followed by a crab cake, a spoonful of spicy remoulade, and pickled peppers. Top with the other half of the bun.

Serve the crab cake sandwiches immediately with house made chips on the side.
