Prepare the Ingredients
Chop the onions, bell peppers, tomatoes, and mushrooms. If using fresh spinach, rinse and dry it. If using ham, bacon, or sausage, cook and chop them into small pieces.

Beat the Eggs
In a mixing bowl, crack the eggs and beat them well. Season with salt and pepper to taste.

Cook the Omelet
Heat a non-stick skillet over medium heat. Add a bit of olive oil if desired to prevent sticking. Pour the beaten eggs into the skillet. As the eggs start to set, add your choice of three ingredients (onions, peppers, spinach, tomato, cheese, mushrooms, ham, bacon, or sausage) on top of the eggs.

Fold the Omelet
Once the edges are set and the middle is still a bit runny, carefully fold the omelet in half using a spatula. Cook for an additional 1-2 minutes until fully cooked.

Slide the omelet onto a plate and serve hot.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into small cubes or wedges.

In a large skillet, heat olive oil over medium heat. Add the cubed potatoes and season with garlic powder, paprika, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and tender.
