    Prepare Pickled Red Onion

    Slice the red onion thinly and combine it with apple cider vinegar, sugar, and salt in a bowl. Let it sit for at least 30 minutes to pickle.

    Make Peanut Salsa Macha

    In a saucepan, heat the vegetable oil over medium heat. Add the dried chiles and cook until they become fragrant (about 1-2 minutes). Remove from heat and let cool. Blend the peanuts, garlic, lime juice, and cooled oil with chiles in a food processor until smooth. Set aside.

    Seared Tuna

    Heat olive oil in a skillet over high heat. Season the tuna steaks with salt and black pepper. Sear the tuna for about 1-2 minutes on each side for medium-rare. Adjust time to preference.

    Assembly

    Slice the seared tuna and serve it on a plate. Drizzle with peanut salsa macha, add pickled red onions, and garnish with fresh cilantro.
