Method
Entree - BBQ Skewers
- 1
Prepare the Marinade
In a bowl, combine soy sauce, brown sugar, minced garlic, black pepper, and coconut vinegar. Mix well until the sugar is dissolved.
- 2
Marinate the Meat
Cut the chicken or pork into bite-sized pieces, then add to the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
- 3
Prepare the Skewers
Soak the wooden skewers in water for 30 minutes to prevent burning during grilling.
- 4
Skewer the Meat
After marinating, thread the meat onto the skewers. Leave a little space between each piece for even cooking.
- 5
Grill the Skewers
Preheat the grill to medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally until the meat is cooked through and has charred marks.
Side - Rice
- 6
Rinse the Rice
Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- 7
Cook the Rice
In a pot, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
- 8
Simmer the Rice
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
