1. Marinate the Chicken

In a bowl, combine soy sauce, vinegar, minced garlic, bay leaves, black peppercorns, and water. Add the chicken pieces, ensuring they are well coated. Cover and marinate for at least 30 minutes.

2. Cook the Chicken

In a pot, add the marinated chicken along with the marinade. Bring to a boil, then reduce the heat and simmer for 30-40 minutes, or until the chicken is tender and cooked through.

Rice Preparation

Rinse the jasmine rice under cold water until the water runs clear.

4. Cook the Rice

In a pot, combine rinsed rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until the rice is cooked and water is absorbed.

Pancit Preparation

5. Soak Noodles

Soak bihon noodles in warm water for about 10 minutes, then drain.

6. Sauté Vegetables

In a large pan, heat cooking oil over medium heat. Sauté garlic and onion until fragrant. Add carrots and cabbage, and cook until tender.

7. Combine Noodles and Chicken

Add shredded chicken and soaked noodles to the pan. Pour in soy sauce and toss everything together. Cook for an additional 5-7 minutes until heated through.

Lumpia Preparation

8. Prepare the Filling

In a bowl, combine ground pork, minced carrots, chopped green onions, minced garlic, salt, and pepper. Mix well.

9. Wrap the Lumpia

Take a lumpia wrapper and place a spoonful of filling near the edge. Roll tightly and seal the edges with a bit of water. Repeat with remaining wrappers.

10. Fry the Lumpia

In a deep skillet, heat cooking oil over medium heat. Fry the lumpia in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
