Marinate the Meat

In a large bowl, combine the chicken or pork with soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Mix well and let it marinate for at least 30 minutes, preferably in the refrigerator.

Sauté Optional Ingredients

In a large pot or deep skillet, heat a little oil over medium heat. Add the sliced onion (if using) and sauté until translucent, about 3 minutes.

Brown the Meat

Add the marinated chicken or pork to the pot, reserving the marinade. Sear the meat until browned on all sides, about 5-7 minutes.

Add Marinade

Pour the reserved marinade and water into the pot. Bring to a boil, then reduce heat to low and cover the pot.

Simmer

Let it simmer for about 45-60 minutes, or until the meat is tender and flavorful. Stir occasionally and adjust seasoning if necessary.

Optional Sweetening

If desired, add brown sugar during the last 10 minutes of cooking to balance the flavors.

Garnish and Serve

Once cooked, garnish with chopped green onions (if using) and serve hot with steamed rice.
