Filling Preparation

Cook the Greens
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Add Spinach and Arugula
Add the fresh spinach and arugula to the skillet. Cook until wilted, about 2-3 minutes. Stir occasionally and remove from heat.

Mix in Cheese and Seasonings
Transfer the cooked greens to a bowl. Add the crumbled feta cheese, salt, black pepper, and grated nutmeg. Mix well.

Add Egg
Once the mixture has cooled slightly, add the beaten egg and stir until combined.

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Add the diced butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. You may not need all the water.

Chill the Dough
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles with a diameter of about 5-6 inches.

Fill the Dough Circles
Place about 2 tablespoons of the spinach filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal.

Bake the Pies
Place the pies on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes or until golden brown.
