Method

Cooking the Base

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

    Add Spinach

    Gradually add the chopped fresh spinach to the pot. Cook, stirring frequently, until the spinach is wilted and reduced in volume, about 5 minutes.

    Incorporate Rice

    Once the spinach is wilted, add the rice to the pot. Stir well to combine with the spinach and aromatics.

Cooking the Rice

    Add Broth and Seasoning

    Pour in the vegetable broth, and add the lemon juice, salt, and black pepper. Stir to combine all ingredients.

    Bring to a Boil

    Increase the heat to high and bring the mixture to a boil, then reduce heat to low.

    Simmer

    Cover the pot and let it simmer for about 15 minutes or until the rice is cooked and has absorbed all the liquid.

Finishing Touches

    Fluff and Garnish

    Once the rice is cooked, remove the pot from heat. Fluff the rice with a fork and stir in the chopped dill. If desired, sprinkle crumbled feta cheese on top before serving.
