Salad Preparation

    Cook the Shrimp

    In a medium pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from heat, drain, and cool. Chop into bite-sized pieces.

    Prepare the Bulgur Wheat

    In a separate bowl, combine bulgur wheat with 1.5 cups of boiling water. Cover and let it sit for 15 minutes until the bulgur absorbs the water and becomes tender. Fluff with a fork.

    Mix the Salad Ingredients

    In a large bowl, combine the cooked shrimp, bulgur wheat, diced tomatoes, cucumber, chopped parsley, mint leaves, and sliced green onion. Season with salt and black pepper to taste. Toss well to combine.

    Make the Vinaigrette

    In a small bowl, whisk together Dijon mustard, red wine vinegar, minced garlic, salt, and black pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified and smooth.

    Pour the Dijon vinaigrette over the salad mixture. Toss gently to ensure all ingredients are evenly coated with the dressing.
