Cooking the Pasta

    Boil Water

    In a large pot, bring water to a boil. Add salt once boiling.

    Cook Pasta

    Add pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving 1/2 cup of the pasta water.

Preparing the Vegetables

    Sauté Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.

    Add Vegetables

    Add zucchini, bell pepper, carrot, and cherry tomatoes to the skillet. Sauté for 5-7 minutes until the vegetables are slightly tender.

    Add Spinach

    Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

Combining Ingredients

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss well to combine.

    Adjust Consistency

    If the mixture seems dry, add reserved pasta water a little at a time until you reach the desired consistency.

    Season and Serve

    Season with black pepper and sprinkle with grated Parmesan cheese and fresh basil before serving.
