Prepare the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and place on a paper towel-lined plate to drain excess grease.

Make Romesco Sauce
In a blender or food processor, combine roasted red peppers, garlic, tomato paste, red wine vinegar, cumin, salt, and black pepper. Blend until smooth. If it’s too thick, you can add a little olive oil to reach your desired consistency.

Finely chop the Spanish almonds and pistachios, setting them aside for garnishing.

Slice the smoked gouda cheese into thin pieces or small cubes for easy serving.

On a large serving platter, arrange the crispy bacon, smoked gouda cheese, and dollops of the romesco sauce.
