Preparation

    Marinate the Meat

    In a bowl, combine olive oil, minced garlic, oregano, cumin, salt, pepper, and lemon juice. Add the chicken thighs or lamb to the marinade and mix well. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare Tzatziki Sauce

    In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, and salt until smooth. Adjust seasoning to taste, and refrigerate until ready to serve.

    Make Side Salad

    In a bowl, combine diced tomatoes, diced cucumber, sliced red onion, and crumbled feta cheese. Drizzle with olive oil and red wine vinegar, then season with salt and pepper to taste. Toss to combine and set aside.

Cooking

    Grill the Meat

    Preheat the grill to medium-high heat. Remove the marinated meat from the refrigerator and place it on the grill. Cook for 6-8 minutes on each side or until the internal temperature reaches 75°C (165°F) for chicken or 70°C (160°F) for lamb. Remove from grill and let rest for a few minutes.

    Warm the Pita Bread

    While the meat is resting, warm the pita bread on the grill for about 1-2 minutes on each side until soft and slightly toasted.

Serving

    Assemble the Platter

    Slice the grilled meat into strips. Serve on a platter with warmed pita bread, tzatziki sauce, and side salad. Enjoy your gyro platter!
