Method

Marinating the Chicken

    Prepare the Marinade

    In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well.

    Marinate the Chicken

    Add the boneless chicken thighs to the marinade. Ensure that the chicken is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for the best flavor.

Cooking the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Chicken

    Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 75°C (165°F).

    Rest the Chicken

    Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing.

Making the Garlic Sauce

    Combine Ingredients

    In a small bowl, whisk together minced garlic, mayonnaise, lemon juice, and salt to taste until smooth.

Cooking the Rice

    Rinse the Rice

    Rinse the long-grain rice under cold water until the water runs clear.

    Cook the Rice

    In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the water is absorbed.

    Fluff the Rice

    Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
