Method

Flatbread Preparation

  1. 1

    Make the Dough

In a mixing bowl, combine warm water and yeast. Let it sit for 5 minutes until foamy. Add flour, olive oil, and salt. Mix until a dough forms, then knead on a floured surface for 5-7 minutes until smooth.

  2. 2

    Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Steak Cooking

  1. 3

    Season the Steak

Pat the steak dry and season both sides with salt, pepper, and dried oregano.

  2. 4

    Cook the Steak

Heat a skillet over medium-high heat. Add a little olive oil and sear the steak for 4-5 minutes on each side or until desired doneness. Remove from heat and let rest before slicing.

Onion Jam Preparation

  1. 5

    Cook the Onions

In a skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 15 minutes until they are soft and caramelized.

  2. 6

    Add Sugar and Vinegar

Stir in the brown sugar and balsamic vinegar, cooking for an additional 5 minutes until thickened. Remove from heat and set aside.

Horseradish Crème Fraîche Preparation

  1. 7

    Mix Ingredients

In a small bowl, combine crème fraîche, prepared horseradish, and lemon juice. Mix well and adjust seasoning if needed.

Assembly

  1. 8

    Preheat Oven

Preheat your oven to 475°F (245°C).

  2. 9

    Shape and Bake Flatbread

Roll out the risen dough into a rectangular shape. Place on a baking sheet and bake for 10-12 minutes until golden and crisp.

  3. 10

    Top with Steak and Cheese

Once the flatbread is baked, layer with sliced steak and sprinkle with grated Gruyère cheese. Return to the oven for another 5 minutes until cheese is melted.

  4. 11

    Add Onion Jam and Arugula

Spread the onion jam over the melted cheese, and top with baby arugula.

  5. 12

    Finish with Truffle Oil

Drizzle black truffle oil over the top before serving.
