Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. Let them sit to dry slightly.

    Blend the Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, onion, and garlic. Pulse until finely chopped but not pureed.

    Add Spices and Flour

    Add cumin, coriander, baking powder, salt, black pepper, and flour to the food processor. Pulse until mixed well. The mixture should hold together when pressed.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    In a deep frying pan, heat the oil over medium heat. Fry the falafel balls until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Wrap Assembly

    Prepare the Vegetables

    Wash and chop the lettuce, tomato, and cucumber. Dice the tomato and slice the cucumber.

    Assemble the Wraps

    Take a piece of pita bread and layer it with lettuce, chopped tomato, sliced cucumber, and 2-3 falafel balls. Drizzle tahini sauce over the top.

    Wrap and Serve

    Fold in the sides of the pita and wrap it up tightly. Serve immediately with extra tahini sauce on the side.
