Falafel

    Prepare Chickpeas

    Soak the dried chickpeas in water overnight or for at least 8 hours. Drain and rinse them before use.

    Make Falafel Mixture

    In a food processor, combine the soaked chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended, but not pureed.

    Form Falafel Balls

    Use your hands to shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry Falafel

    In a deep skillet, heat the olive oil over medium heat. Fry the falafel balls in batches until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.

Hummus

    Prepare Hummus

    In a food processor, combine the canned chickpeas, tahini, garlic, lemon juice, olive oil, salt, and water. Blend until smooth and creamy, adding more water if needed to reach desired consistency.

Tabbouleh

    Prepare Tabbouleh

    In a large bowl, combine the chopped parsley, mint, diced tomato, diced cucumber, and bulgar wheat. Add lemon juice, olive oil, and salt. Mix well and let it sit for 15 minutes to allow flavors to meld.

Serve

    Assemble the Plate

    Serve the falafel with a generous portion of hummus, tabbouleh, and warm pita bread on the side.
