Falafel Preparation

    Soak Chickpeas

    In a large bowl, soak the dried chickpeas in water overnight or for at least 8 hours. Make sure they are fully submerged.

    Prepare Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.

    Form the Falafel Balls

    Transfer the mixture to a bowl and add the flour. Mix well until combined. Shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    In a small bowl, combine tahini, water, lemon juice, minced garlic, and salt. Whisk until smooth and creamy. Adjust the consistency with more water if necessary.
