Preparation

  1. 1

    Prepare the Lamb

Cut the lamb shoulder into 1-inch cubes and season with salt and black pepper.

Cooking

  1. 2

    Sear the Lamb

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the seasoned lamb cubes and sear until browned on all sides, about 5-7 minutes. Remove the lamb from the pot and set it aside.

  2. 3

    Sauté the Aromatics

In the same pot, add the chopped onion, minced garlic, and grated ginger. Sauté until the onion becomes translucent, about 5 minutes.

  3. 4

    Add Spices

Stir in the ground cumin, ground coriander, turmeric powder, garam masala, and cayenne pepper. Cook for another 2-3 minutes until the spices are fragrant.

  4. 5

    Add Tomatoes and Lamb

Add the diced tomatoes to the pot, along with the seared lamb. Stir well to combine.

  5. 6

    Simmer

Pour in the coconut milk and bring the mixture to a gentle simmer. Cover and cook for about 1.5 to 2 hours, or until the lamb is tender and the flavors have melded together. Stir occasionally during cooking.

  6. 7

    Garnish and Serve

Once cooked, taste and adjust seasoning if necessary. Serve hot, garnished with chopped cilantro.
