    Place the potato wedges in a large pot and cover them with cold water. Add 1 tsp of salt and bring to a boil over high heat. Once boiling, reduce the heat to medium and let them simmer for about 10 minutes until slightly tender but still firm.

    Drain the potatoes in a colander and let them sit for about 5 minutes to dry out. This step is crucial for achieving crispiness.

    Preheat your oven to 425°F (220°C).

    In a large bowl, toss the dried potato wedges with olive oil, black pepper, and the remaining salt, ensuring that each piece is evenly coated.
