Chicken Marinade

Method

Chicken Marinade Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine the olive oil, plain yogurt, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice. Mix well until all ingredients are fully incorporated.

  2. 2

    Marinate the Chicken

Add the boneless chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Garlic Sauce Preparation

  1. 3

    Make the Garlic Sauce

In a small bowl, whisk together the minced garlic, mayonnaise, lemon juice, olive oil, and salt until smooth and creamy. Set aside in the refrigerator until ready to serve.

Cooking the Chicken

  1. 4

    Cook the Chicken

Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and shake off any excess. Grill the chicken for about 5-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.

Assembling the Dish

  1. 5

    Slice the Chicken

Once rested, slice the grilled chicken into thin strips.

  2. 6

    Prepare the Pita

Warm the pita bread in a dry pan or microwave for a few seconds until soft and pliable.

  3. 7

    Assemble the Shawarma

To serve, place sliced chicken in the center of the warmed pita, then top with sliced tomatoes, cucumbers, red onion, and a drizzle of garlic sauce. Sprinkle with fresh parsley, fold the pita, and enjoy!
