Prepare the Calamari
Clean and slice the calamari into rings if not pre-cut. Rinse under cold water and pat dry with a paper towel.

Marinate the Calamari
In a mixing bowl, combine the cleaned calamari with buttermilk. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together flour, cornstarch, salt, black pepper, garlic powder, and paprika until well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until fully coated.

Fry the Calamari
Carefully lower the breaded calamari into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes until golden brown, then remove with a slotted spoon and drain on paper towels.

Simmer the Sauce
Add the canned crushed tomatoes, oregano, salt, and black pepper to the pan. Stir to combine and bring to a simmer. Cook for 15-20 minutes, stirring occasionally.

Finish the Sauce
Stir in the chopped fresh basil just before serving. Adjust seasoning to taste if necessary.
