Brown the Meat
Add the lamb and beef short ribs to the pot. Brown the meat on all sides.

Add Flavorings
Stir in the tomato paste, crushed tomatoes, red wine, oregano, bay leaves, salt, and pepper. Bring to a simmer.

Braise the Meat
Cover the pot and reduce heat to low. Let the meat braise for 2-3 hours, or until tender. Stir occasionally.

Prepare the Vegetables
While the meat is cooking, slice the eggplants and sprinkle with salt. Let them sit for 30 minutes to draw out moisture, then rinse and pat dry.

Bechamel Sauce Preparation

Add Milk
Gradually whisk in the milk, stirring constantly until the sauce thickens and is smooth.

Season the Sauce
Add nutmeg, salt, and pepper to taste. Remove from heat.

Add Egg Yolks
Whisk in the egg yolks and half of the Parmesan cheese until well combined.
Assembly and Baking

Layer the Moussaka
In a greased baking dish, layer half of the fried potatoes, followed by half of the eggplant slices, then the braised meat mixture. Repeat the layers.

Top with Bechamel
Pour the bechamel sauce over the top layer and sprinkle with the remaining Parmesan cheese.

Bake
Preheat the oven to 350°F (175°C) and bake for 45-60 minutes, or until the top is golden brown.

Let the moussaka rest for 15 minutes before cutting and serving.
