Dip Preparation

    Roasting the Eggplant

    Preheat your oven to 400°F (200°C). Prick the eggplants with a fork a few times and place them on a baking sheet. Roast for about 30-40 minutes, turning occasionally, until the skin is charred and the flesh is soft. Remove from the oven and let cool.

    Making the Dip

    Once the eggplants are cool enough to handle, cut them in half and scoop out the flesh into a mixing bowl. Add tahini, minced garlic, lemon juice, olive oil, salt, cumin, paprika, and black pepper. Use a fork or a food processor to blend until smooth or to your desired consistency.

    Taste and Adjust

    Taste the baba ghanoush and adjust seasoning if needed, adding more salt, lemon juice, or tahini to suit your preference.

Pita Chips Preparation

    Preparing the Pita Chips

    While the eggplant is roasting, preheat a separate oven to 375°F (190°C). Cut the pita bread into triangles and place them on a baking sheet.

    Seasoning and Baking

    Drizzle olive oil over the pita triangles and sprinkle with salt. Toss gently to coat. Bake for 10-15 minutes or until they are crisp and golden brown, flipping halfway through.

    Serving

    Remove the pita chips from the oven and let cool slightly. Serve the baba ghanoush in a bowl with the warm pita chips on the side.
