Instructions
- 1
Prepare the Asparagus
Peel the white asparagus and trim the ends. In a large pot, bring salted water to a boil and cook the asparagus for about 10-12 minutes until tender. Drain and set aside.
- 2
Make the Meringue
In a clean mixing bowl, whip the egg whites until soft peaks form. Gradually add the granulated sugar, continuing to whip until the meringue is glossy and stiff peaks form. Gently fold in the salt.
- 3
Combine and Bake
Preheat the oven to 120°C (250°F). On a baking sheet lined with parchment paper, create a bed of meringue, then place the cooked asparagus on top. Cover the asparagus completely with the remaining meringue.
- 4
Bake
Bake in the preheated oven for about 45 minutes or until the meringue is dry and lightly golden. Remove from the oven and let cool slightly.
- 5
Serve
Carefully break the meringue shell to reveal the asparagus inside. Drizzle with olive oil and garnish with fresh herbs before serving.
