    Prepare the Filling

    In a skillet over medium heat, heat the olive oil. Add the chopped onion and garlic, cooking until soft and translucent. Add the ground lamb, cumin, cinnamon, paprika, salt, and pepper. Cook until the lamb is browned, breaking it apart with a wooden spoon. Stir in the chopped parsley and remove from heat. Allow to cool slightly.

    Prepare the Phyllo Dough

    Preheat the oven to 375°F (190°C). On a clean surface, lay out one sheet of phyllo dough. Brush lightly with melted butter or olive oil. Top with another sheet and repeat until you have 3 layers.

    Assemble the Cigars

    Cut the layered phyllo into long strips (about 3 inches wide). Place a tablespoon of the lamb filling at one end of each strip. Fold the sides over the filling and roll tightly into a cigar shape. Place seam-side down on a baking sheet.

    Bake

    Brush the tops of the cigars with the beaten egg for a golden finish. Bake for 20-25 minutes or until golden brown and crispy. Serve hot with your choice of dipping sauce.
