    Prepare the Lamb

    Preheat your oven to 200°C (400°F). Season the lamb loin with minced garlic, rosemary, thyme, olive oil, salt, and black pepper. Sear the lamb in a hot skillet for about 2-3 minutes on each side until browned.

    Cool the Lamb

    Remove the lamb from the skillet and let it cool for about 10 minutes.

    Prepare the Pastry

    Roll out the puff pastry on a floured surface. It should be large enough to wrap around the lamb completely.

    Spread a layer of Moroccan mint jelly over the cooled lamb. Place the lamb in the center of the pastry. Wrap the pastry around the lamb, sealing the edges with the beaten egg.
