Cooking the Beef Cheeks

    Prepare the Ingredients

    In a large bowl, season the beef cheeks with salt and black pepper. Set aside.

    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Add the beef cheeks and sear on all sides until browned, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute.

    Deglaze the Skillet

    Pour in the red wine and scrape up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes.

    Combine in Slow Cooker

    Transfer the sautéed vegetables and red wine mixture into a slow cooker. Add the beef stock, bay leaves, and thyme. Place the seared beef cheeks on top. Cover and cook on low for 6-8 hours, or until the beef is tender.
