Mussels and Spicy Tomato Confit

    Prepare the Mussels

    Rinse the mussels under cold water and remove any beards. Discard any mussels that are open and do not close when tapped.

    Make the Spicy Tomato Confit

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent, about 5 minutes.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, harissa paste, cumin, smoked paprika, salt, and black pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to meld.

    Cook the Mussels

    Add the prepared mussels to the pot, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

    Garnish and Serve

    Remove the pot from heat, stir in the chopped parsley, and serve the mussels hot with lemon wedges on the side.
