Preparation
- 1
Make the Chocolate Balloon
Melt the dark chocolate in a heatproof bowl over simmering water. Inflate the balloons and dip them in the melted chocolate, ensuring they are thoroughly coated. Allow them to set on a parchment-lined tray until the chocolate hardens.
- 2
Prepare the Cream Filling
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Set aside in the refrigerator.

Bake the Génoise
Preheat the oven to 180°C (350°F). In a bowl, whisk the eggs and granulated sugar until pale and fluffy. Gently fold in the sifted flour and melted butter. Pour the batter into a prepared cake pan and bake for 25-30 minutes. Let cool before slicing.
