Filling and Pie Crust

Method

Preparation and Assembly

  1. 1

    Cook the Chicken

In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent. Add the chicken thighs and cook until browned. Stir in cinnamon, ginger, turmeric, cumin, salt, and pepper. Pour in chicken broth, cover, and simmer for 20 minutes or until chicken is cooked through.

  2. 2

    Prepare the Filling

Remove the chicken from the skillet and shred it using two forks. Return shredded chicken to the skillet, add chopped almonds, raisins, and beaten eggs. Mix well and remove from heat.

  3. 3

    Assemble the Bastilla

Preheat the oven to 180°C (350°F). Lay one sheet of phyllo pastry on a greased baking sheet, brush with melted butter, and layer another sheet on top. Repeat until you have 4 layers. Spoon the chicken filling into the center and fold the pastry edges over the filling to form a pie. Use remaining phyllo sheets to cover the top, brushing each layer with butter.

  4. 4

    Bake the Pie

Bake in the preheated oven for 30-35 minutes or until golden brown. Let cool slightly before dusting with powdered sugar and ground cinnamon.
