    Prepare the Zucchini

    Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife. Sprinkle salt on the strips and let them sit for 15 minutes to draw out moisture. Pat dry with a paper towel.

    Make the Filling

    In a bowl, combine ricotta cheese, parmesan cheese, chopped basil, minced garlic, black pepper, and a pinch of salt. Mix well until smooth and creamy.

    Assemble the Rolls

    Preheat your oven to 375°F (190°C). Take a zucchini strip and place a spoonful of the cheese mixture at one end. Roll the zucchini around the filling and place seam-side down in a baking dish.

    Pour the tomato sauce evenly over the zucchini rolls. Sprinkle shredded mozzarella cheese on top.
