Method

Ossobuco Preparation

    Sear the Lamb Shanks

    In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and black pepper. Sear them on all sides until browned, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add diced onion, carrot, celery, and garlic. Sauté until softened, about 5 minutes.

    Deglaze

    Pour in the red wine and scrape the bottom of the pot to deglaze. Allow it to reduce by half.

    Slow Cook

    Add the lamb shanks back to the pot along with beef stock and rosemary. Bring to a simmer, cover, and cook on low heat for 2-3 hours until the meat is tender.

Gremolata Preparation

    Mix Ingredients

    In a small bowl, combine lemon zest, minced garlic, chopped parsley, rosemary, and olive oil. Mix well and set aside.

Saffron Risotto Preparation

    Sauté Onions and Garlic

    In a saucepan, melt butter over medium heat. Add chopped onion and minced garlic, sauté until translucent.

    Add Rice

    Stir in Arborio rice and toast for 2 minutes.

    Deglaze with Wine

    Pour in the white wine and cook until absorbed.

    Cook Risotto

    Gradually add stock, one ladle at a time, stirring continuously. Add saffron threads after 10 minutes and continue until rice is al dente. Stir in Parmesan cheese and season with salt and pepper.

Bone Marrow Demi-Glace Preparation

    Roast Bone Marrow

    Preheat your oven to 400°F (200°C). Place bone marrow in a baking dish and roast for 20-25 minutes until soft.

    Prepare Demi-Glace

    In a saucepan, combine roasted marrow, red wine, beef stock, and thyme. Simmer until reduced by half. Season with salt and pepper.
