Focaccia Preparation

Activate Yeast
In a small bowl, mix warm water and active dry yeast. Let it sit for 5-10 minutes until frothy.

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour and salt.

Combine Ingredients
Add the yeast mixture and 1/2 cup of olive oil to the flour mixture. Stir until a dough forms.

Knead the Dough
Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Prepare Baking Pan
Preheat the oven to 425°F (220°C) and oil a baking sheet with the remaining olive oil.

Shape the Dough
After the first rise, punch down the dough and transfer it to the baking sheet. Stretch it to fit the pan.

Cover the dough with a cloth and let it rise for another 20-30 minutes.

Add Toppings
Dimple the dough with your fingers, then sprinkle with fresh rosemary and coarse sea salt.

Bake in the preheated oven for 20-25 minutes, or until golden brown.
