    Prepare the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 40-50 minutes, until tender. Remove and let cool.

    Prepare the Potatoes

    Peel and dice the potatoes. Boil them in salted water until tender, about 15 minutes. Drain and set aside.

    Make the Sauce

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped fresh tomatoes, capers, and olives. Cook for about 10-15 minutes until the tomatoes break down into a sauce.

    Combine Ingredients

    Cut the cooled octopus into bite-sized pieces and add to the skillet with the sauce. Stir well to combine and let simmer for an additional 5 minutes. Add the cooked potatoes and mix gently.

    Season and Serve

    Season with salt and black pepper to taste. Garnish with chopped fresh parsley before serving.
