Add Tomato Paste and Wine
Stir in the tomato paste and cook for 2 minutes. Then pour in the dry white wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes.

Combine Stock and Seasonings
Add the fish or seafood stock, chopped lobster, salt, black pepper, thyme, and bay leaf. Bring to a boil, then reduce heat to low and let it simmer for 30 minutes.

Blend the Bisque
Remove the bay leaf from the pot. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
