    Prepare the Zucchini

    Slice the zucchini lengthwise into thin strips using a mandoline or a sharp knife. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.

    Cook the Shrimp

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp, season with salt and pepper, and cook until pink and cooked through, about 3-4 minutes. Remove from heat and let cool.

    Prepare the Filling

    In a bowl, mix the goat cheese, lemon juice, and freshly chopped basil. Add the cooked shrimp and stir to combine.

    Assemble the Involtini

    Pat the zucchini strips dry with a paper towel. Take one strip, place a spoonful of the filling at one end, and roll it up tightly. Repeat with the remaining strips and filling.

    Cook the Involtini

    In the same skillet, add the remaining olive oil and heat over medium heat. Place the zucchini rolls seam-side down and cook for 2-3 minutes until slightly golden. Carefully turn and cook for another 2-3 minutes.

    Remove from the skillet and serve warm, garnished with additional basil if desired.
