Make the Crust
Preheat the oven to 350°F (175°C). In a medium bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes. Remove from oven and set aside to cool.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add eggs one at a time, mixing just until incorporated.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the Cheesecake
Refrigerate the cheesecake for at least 4 hours, preferably overnight.

Spread raspberry jam over the top of the chilled cheesecake and arrange sliced strawberries on top before serving.
